Since finding fresh musir can be a treasure hunt, this authentic mast-o-musir-recipe relies on dried musir, which are rehydrated to release their unique, mellow pungency. The process of soaking the dried slices softens them and tames their intensity, resulting in a complex flavour that infuses the creamy yogurt without the harsh bite of raw garlic, creating a dip that is both deeply flavourful and refreshingly smooth.
For the best results, allow the dip to chill in the refrigerator for at least four hours, though overnight is even better; this gives the flavours time to meld and deepen. Instructions
Place the dried musir in a bowl and cover with cold water. Let them soak for at least 4 hours, or overnight in the refrigerator, to rehydrate and soften.
Drain the soaked musir well and rinse them. Pat dry and inspect them, trimming away any hard stem pieces that didn't soften.
Finely chop the rehydrated musir. The smaller the pieces, the better the flavour will distribute throughout the dip.
In a medium bowl, combine the chopped musir with the Greek yogurt, salt, and pepper. Stir until everything is evenly incorporated.
Cover the bowl and refrigerate for at least 4 hours to allow the flavours to meld together. For the most authentic and developed taste, let it chill overnight.
When ready to serve, give the dip a final stir. Garnish with a sprinkle of dried rose petals or fresh mint leaves, if desired, and serve with your favourite bread, chips, or vegetables.
