Make the Dough
In a small bowl, dissolve the sugar and fresh yeast in the 200ml of lukewarm water. Let it sit for a few minutes until it starts to foam. In a large bowl, combine the flour, salt, and caraway seeds. Pour in the yeast mixture and the 2 tbsp of oil. Mix and knead with your hands until you form a smooth, elastic, and non-sticky dough. , First Rise: Place the dough in a bowl, sprinkle with a little flour, cover with a cloth, and let it rise in a warm place for about an hour, or until it has doubled in size. , Shape and Second Rise: Line a baking sheet with parchment paper or grease it with oil. Place the risen dough on the sheet and use your hands to spread and flatten it out to a thickness of about 1.5-2cm. Let it rest and rise again for about 20 minutes. , Prepare the Topping & Bake: Preheat your oven to 180°C (350°F). In a small bowl, mix together the 2 tbsp of oil, 2 tbsp of water, and the crushed garlic. Brush this mixture generously over the surface of the dough. Bake for about 30-35 minutes, or until the flatbread is golden brown. , Finishing Touch: Once you remove the flatbread from the oven, you can brush it lightly with a little cold water for a softer crust.
