Separate the garlic cloves from the bulbs and peel them. Soaking in warm water for 30 minutes can make peeling easier.
In a large jar, stir the vinegar brine ingredients (vinegar, salt, water) together until the salt dissolves. Add the peeled garlic cloves, ensuring they are fully submerged. Seal the jar and let it stand at room temperature for 5-7 days. [4, 6]
After 5-7 days, drain the vinegar brine from the jar. In a saucepan, bring the soy brine ingredients (soy sauce, sugar, water, vinegar) to a boil and simmer for a minute.
Pour the hot soy brine over the garlic cloves in the jar, making sure they are fully covered. Seal the jar tightly and let it stand at room temperature for at least 2 weeks before eating. For best results, refrigerate after opening. [1, 4]
