Instead of using raw, pungent garlic, this recipe calls for roasting whole heads until they are soft, sweet, and caramelized. When blended with sautéed onions, stock, and a touch of cream, the roasted garlic gives the soup a velvety texture and an unforgettable depth that feels like a warm embrace.

For the most authentic experience, serve this soup with homemade croutons, which add a delightful crunch. You can simply toast cubed bread in a pan with butter until golden. While the garlic is roasting, melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion and cook slowly for about 15-20 minutes, stirring occasionally, until soft and caramelized.

Once the garlic is cool enough to handle, squeeze the soft, roasted cloves out of their skins and into the pot with the onions. Add the sweet Hungarian paprika and cook for another minute until fragrant.
