In a large frying pan, heat 2 tablespoons of olive oil over medium-high heat. Add the liver and sear on all sides until browned but still slightly pink inside. Remove the liver from the pan and set aside.
In the same pan, add the remaining tablespoon of olive oil. Sauté the chopped onion and sliced peppers until they begin to soften, for about 5-7 minutes.
Add the minced garlic and cook for another minute until fragrant. Stir in the chopped tomatoes, paprika, and oregano. Let the sauce simmer for 10-12 minutes, until it has thickened slightly.
Preheat your oven to 180°C (350°F). Stir the crumbled cheese and the seared liver back into the pan with the vegetable sauce. Season with salt and pepper to taste and mix everything together well.
Transfer the mixture to an oven-safe dish or individual clay pots. Bake for 15-20 minutes, until the top is bubbling and slightly golden. Garnish with fresh parsley and serve hot with crusty bread.
