Preheat the oven to 180°C (350°F). Grease and flour a 10-cup Bundt cake pan.
In a medium saucepan, combine the butter, cocoa powder, salt, and water. Melt over a medium heat, stirring to combine, then remove from the heat and set aside.
In a large mixing bowl, whisk together the flour, sugar, and bicarbonate of soda.
Gradually pour the melted chocolate mixture into the dry ingredients, whisking constantly until the mixture is smooth.
Add the eggs one at a time, whisking until combined after each addition. Whisk in the sour cream, vanilla extract, and the black garlic paste until the batter is smooth.
Pour the batter into your prepared Bundt pan and bake for 40-45 minutes, or until a skewer inserted into the centre of the cake comes out clean.
Place the pan on a wire rack to cool for 15 minutes, then carefully invert the cake onto the wire rack to cool completely before serving.
